Lamb Chops with Strawberry/Blackberry Compte submit by Jenni Mannina in Woodbridge, VA.
Ingredients (with US measurements):
2 racks of Lamb (ask butcher to slice in lollipop chops for you)
1 lb of Fresh Strawberries (sliced)
8 oz of Fresh Blackberries
2 cups port wine
1/4 cup olive oil
3 cloves garlic (minced)
2 tbsp chopped fresh parsely
salt and pepper
Cooking Directions:
In a small bowl combine olive oil, garlic and parsley. Brush on to chops. Let sit until ready to cook. In a med saucepan, add strawberries and blackberries and cook until liquified, about 20-25 min. In a small saucepan, bring port to a boil then bring to a gentle boil and cook until reduced by 2/3, about 20-25 min.
Grill lamb chops over high heat, 5 min on first side then flip and cook 5 min. Combine port and berries, and serve over chops.

Harmonious wine of soft tannins with a delicate, velvet body. It is very approachable in style with flavors of red ripe fruits, raspberry and plums. Smooth and lingering on the finish.
