Spicy Thai Chicken submit by Sonja Sundberg in McKinleyville, CA
Ingredients (with US measurements):
2-4 Chicken Breasts
2 Tablespoons Olive oil
1/4 Cup Butter
3 Cloves Garlic (Minced)
1 Onion Chopped
1 teaspoon Red Pepper flakes
2 Tablespoons Curry Powder
1/4 teaspoon Ginger
Pinch of Salt
4 Tablespoons Sugar
1/2 Can of Chicken Broth
1/2 Can of Coconut Milk
1/4-1/2 cup Shredded Coconut
Cooking Directions:
In a Large Skillet, sautee onion and garlic in olive oil & butter until softened. Lightly brown chicken breasts in mixture. Mix remaining ingredients together and pour into sautee pan. Simmer 20-25 minutes over low to medium heat, turning once, until some of liguid is reduced and thickened & chicken is cooked through.(Bone in chicken will take longer) Serve over White or Jasmine rice with Asparagus spears to garnish!
Additional Comments:
You can make this as spicy as you want by adding or removing the red pepper flakes….I have three kiddos and on the nights when I know they will be eating this dish, I tone down the spice. This is a quick and Fabulous dish that seems really labor intensive to the people eating it, when really it took just a few to prepare…..Paired with some yummy wine-you can’t go wrong!!

This is so delicious. I copoked tonight for dinner and got rave reviews! It looks like it takes alot of stuff, but it really doesn’t. EASY and really good. I didn’t even need a glass of wine to make people eat it!

What a fun contest…… I had a great time winning and even picked up 4 more great recipes along the way!!
